- Develop and oversee pastry menus across multiple restaurants located within the same complex.
- Lead, train, and mentor the pastry teams in each outlet to ensure consistency and high quality.
- Create innovative pastry concepts and seasonal offerings that reflect each brand’s identity while maintaining overall standards.
- Collaborate with each restaurant’s Head Chef and Management to enhance the overall guest experience.
- Supervise daily operations of the pastry sections in all locations, ensuring smooth coordination and efficiency.
- Train pastry team members on new recipes, preparation techniques, and product rollouts.
- Ensure all pastries and desserts are visually appealing, flavourful, and aligned with the standard of each concept.
- Oversee the procurement of ingredients, supplies, and equipment, keeping within budget across all restaurants.
- Maintain rigorous hygiene, food safety, and presentation standards in compliance with regulations.
- Control pastry-related costs, manage inventories, and maintain strong relationships with suppliers.
- Shortlisted candidates will be required to participate in a tasting trial as part of the selection process.
- Minimum 5 years of experience in pastry, including at least 3 years in a senior or multi-outlet role.
- Previous experience in fine dining, upscale casual restaurants, or high-volume operations.
- Strong leadership skills with the ability to manage and develop multiple teams.
- Creative mindset and in-depth knowledge of international pastry trends.
- Familiarity with HACCP standards and kitchen operational procedures.
- Flexibility to move between restaurant locations within the centre as needed.
- Must be currently based in Malta or within the EU.
- Excellent leadership and interpersonal skills with a passion for mentoring.
- Strong communication skills in English, both written and verbal.
- Exceptional organizational and time management abilities to handle multiple locations and priorities.
