We are looking for a Pastry Sous Chef to join our team. Will be ensuring high-quality production of baked goods, desserts, and specialty pastries. Position is on a full time contract basis.Key Responsibilities: - Assist the Head Pastry Chef in daily operations of the pastry section. - Prepare, bake, and decorate pastries, desserts, and specialty items to a high standard. - Supervise, train, and support pastry team members. - Ensure recipes, portion sizes, and presentation standards are followed consistently. - Manage stock levels, ordering, and cost control within the pastry department. - Maintain cleanliness, organization, and compliance with food safety and hygiene standards. - Contribute ideas for new desserts and seasonal menu items.ProfilesCompetencies
  • Select/dose ingredients (flour, yeast, additives...) to prepare bread dough/pastry dough. Mix/knead/roll out dough
  • Divide dough in pieces, roll and shape. Check proofing (rising)
  • Decorate products after cooling (chocolate pieces, sesame seeds, sugar, covering with sauce...)
  • Assemble and decorate products (biscuit layers, butter cream, sauces, glancing...)
  • Mix ingredients for dough, pudding, decorations and desserts
  • Clean and sanitise worktop, tools and rooms
  • Prepare pastries, confectionery and chocolate goods
  • Plan production based on orders, stock and season
  • Receive goods. Keep tally
  • Manage stock; record shortages; place orders
  • Package pastries, confectionery or chocolate goods. Place products on window, shelves or counter
  • Prepare food: Chocolate
  • Prepare food: Confectionery
  • Prepare food: Cakes
  • Prepare food: Bakery goods (white bread, baguettes, special bread...)
  • Prepare food: Sandwiches
  • Store dough and pack bread and pastries
  • Prepare pastry (cut, decorate, brush with egg yolk...)
  • Inform customers about products. Sell products
  • Analyse consumer habits, stock rotation, sales. Draw up commercial action plan (displayed products, place, duration...)
  • Check or handle personnel management: Administrative management of working time
