- Prepare sushi, sashimi, maki, nigiri, and other Japanese dishes according to restaurant standards.
- Ensure freshness and proper handling of all seafood and sushi ingredients.
- Maintain a clean and organized sushi counter and prep area at all times.
- Monitor inventory of fish, rice, and other ingredients; report shortages or spoilage to the Head Chef.
- Follow established recipes and presentation guidelines for consistency and quality.
- Ensure compliance with food safety, hygiene, and sanitation standards (HACCP).
- Interact politely and knowledgeably with guests (where applicable, e.g., live sushi bar settings).
- Collaborate with kitchen staff to ensure smooth service flow and timely dish preparation.
- Train and mentor junior kitchen staff or sushi assistants when required.
- Participate in menu development, seasonal specials, and creative sushi concepts
- Any other tasks commensurate with the role
