The Chef Tournant will play a pivotal role in supporting the Executive Chef, Head Chef, and Sous Chefs in ensuring the highest standards of food preparation, presentation, and safety across all culinary operations. This role requires a proactive approach to maintaining kitchen efficiency, quality, and compliance with health and safety regulations, contributing directly to an exceptional guest experience.Key Responsibilities
- Food Quality Management: Ensure all dishes meet consistent standards for taste, presentation, and portion control throughout your shift.
- Team Coordination: Oversee punctuality, appearance, and professionalism of kitchen staff, ensuring adherence to hygiene, grooming, and operational guidelines.
- Training and Mentorship: Support senior chefs in the training, development, and guidance of junior culinary staff to enhance team performance.
- Inventory and Stock Control: Monitor food deliveries, check for quality and accuracy, label and rotate ingredients, and maintain storage standards to comply with legal and hygienic requirements.
- Kitchen Operations: Ensure all preparation areas are organised, clean, and equipped for smooth service; plan resources and workflow to optimise efficiency and guest satisfaction.
- Cost Management: Assist in monitoring food costs, adhering to budgetary targets, and implementing approved recipe standards to maintain profitability.
- Continuous Improvement: Identify operational challenges, propose solutions, and implement improvements to enhance overall kitchen performance.
- Service Excellence: Guarantee that all food is prepared and delivered promptly while upholding the company’s standards for quality, hygiene, and presentation.
- Education: Culinary qualification or equivalent professional training.
- Experience: Minimum of four years in a professional culinary environment, with prior experience in international 5-star hotels or establishments with Michelin-star, AA rosette, or classical European training considered advantageous.
- Language Skills: Excellent command of English; knowledge of Maltese is an asset.
- Communication Skills: Ability to clearly instruct and motivate kitchen staff, ensuring effective teamwork and smooth operations.
- Interpersonal Skills: Professional, approachable, and collaborative, fostering a positive work atmosphere.
- Technical Skills: Strong culinary expertise, knowledge of food safety regulations, and proficiency in kitchen equipment and procedures.
