- Curate and maintain the restaurant's wine list, ensuring a balanced selection of international and regional wines.
- Provide expert wine recommendations and pairings aligned with the restaurant's tasting menus.
- Deliver professional tableside wine service including presentation, decanting, and proper serving techniques.
- Educate guests on wine characteristics, regions, vintages, and producers.
- Manage wine inventory, stock rotation, and cellar organisation.
- Assist in purchasing and liaising with wine suppliers and distributors.
- Collaborate with the culinary team to develop seasonal wine pairings.
- Ensure compliance with health, safety, and licensing regulations.
- Previous experience as a Sommelier or Assistant Sommelier in a fine-dining or Michelin-starred environment.
- Strong knowledge of international wine regions, grape varieties, and food pairing principles.
- Formal wine certification (e.g., WSET Level 3+, Court of Master Sommeliers, or equivalent) is preferred.
- Excellent communication and guest-service skills.
- Ability to work in a fast-paced, high-standard hospitality environment.
- Strong organisational and inventory management skills.
- Fluency in English; additional languages are considered an asset.
